A patented process that reduces bacteria, impurities, pesticide residues, fat and sodium is a standard feature of the PMP 230C smaller commercial vacuum tumbler.  This process is available as an option for the larger LT-40 commercial units.

The patented Grovac ®process uses specially formulated all-natural marinades. When dissolved in water, they make a solution that has less sodium than is naturally present in protein tissue, so osmosis pulls some of the sodium out of the food.

The tumbler drum is designed to lift the food, so the tumbling food alternates between two environments. One is partially airless; the other is an underwater environment. The alternating environments, combined with the properties of the all-natural marinade, cause disruption of bacterial cell membranes, resulting in a reduction of bacteria and food-borne illnesses.

The special all-natural marinades contain antioxidants. When they are infused into meat, they help to decrease oxidation or deterioration of the meat.

All food products prepared using the patented Grovac ®process, produce as well as meat, will contain less bacteria and sustain a longer shelf life. Meat, poultry and fish will have a better texture, fresher taste, and be extra juicy. Undesirable tastes, such as the off-flavor often found in catfish, are removed by the process.
